Today I spent some time thinking about pigs and pork products and most specifically pork belly. Oh my….. I can’t think of a finer pork product than pork belly. When it’s all crispy on the outside and the fat just explodes in your mouth, like Rib Eye fat, only better, because it’s pork.
Piggy Goes To Market 
Ask Erik about the bacon he bought at the farmer’s market a while back. It was like 1/4″ thick and didn’t taste like bacon, it tasted like pork that had lived a good life, and it tasted like heaven.
I love pr0k! It has tons of that good fat.
